The Valpolicella Ripasso DOC from Le Guaite di Noemi is a complex, elegant, and balsamic red wine.
Grapes: Corvina 35%, Rondinella 20%, Corvinone 35%, other grapes 10% (Oseletta, Croatina).
Production area: Mezzane di Sopra (Verona)
Altitude: 450/500 m a.s.l.
Cultivation method: Guyot
Soil: calcareous with white limestone rock, pink iron-laden limestone rock, basalt rock containing minerals olivine and pyroxene, and volcanic soil.
Vinification and maturation: the grapes are harvested at the end of September, dried for a month, destemmed, pressed, cryomacerated, fermented at controlled temperature with cultivated yeasts, and simultaneous malolactic fermentation, sparkling with Amarone pomace, racked into steel and subsequently aged in second-passage French oak barriques for about 36 months, and after bottling, aged for another 24 months in storage bottles.
