The Valpolicella Superiore DOC from Le Guaite di Noemi is a very full-bodied, fruity, intense red wine with long persistence.
Grapes: Corvina 35%, Rondinella 20%, Corvinone 35%, other grapes 10% (Oseletta, Croatina).
Production area: Mezzane di Sopra (Verona)
Altitude: 450/500 meters above sea level.
Training method: Guyot
Soil: calcareous with white limestone rock, pink iron-rich limestone rock, basaltic rock containing olivine and pyroxene minerals, and volcanic soil.
Vinification and aging: the grapes are harvested in mid-September, dried for a month, destemmed, pressed, cryomacerated, fermented at controlled temperature with selected yeasts and simultaneous malolactic fermentation, followed by aging in second-pass French oak for about 36 months and in bottle for another 24 months.

The Valpolicella Superiore DOC from Le Guaite di Noemi pairs perfectly with many types of food such as pasta, risottos, roast beef, soft cheeses and medium-aged cheeses, soups.

Color: intense ruby red, with garnet reflections.
Aroma: notes of ripe cherry, blue berry, currant, black plum, grass, violet.
Taste: soft and seductive, with an appealing savoriness and optimal acidity, and clear notes of ripe fruit and spices.
