Paccasassi, also known as spaccasassi, are a wild herb that grows on cliffs by the sea. They are usually found in the area of Riviera del Conero and are an ancient culinary tradition as well as a pride of Ancona.
This sea fennel is also classified among the protected plant species in the Regional Park of Cornero, as well as in other Italian and European areas.
Paccasassi have a very particular flavor; in fact, they can be used as a main ingredient in many recipes or as a seasoning for other dishes such as fresh bread, mortadella, and anchovies.
